Blog Prompt – Your holiday menu.
This is a yummy post for sure!!
This year we spent with some of my mother’s friends here in Florida. This is the 1st year that our small family wasn’t together since I have been on this earth. It was different but still nice. It was nice to eat what people from different parts of the country eat here in the US.
We had BBQ’d standing rib roast that just melted in our mouths. Oh my goodness it was wonderful. Scalloped potatoes, corn casserole, asparagus, salad and rolls was the rest of the menu for Christmas day. I also had a great new creamer called Italian Sweet Cream that was wonderful. You can find it in your dairy area at the grocery store.
In the past years at my moms, when we had family over, she would fix Italian beef, garlic cheese grits, Rotel, a really good Olive Cheese Ball and a knock off of the salad you can get at Olive Garden. It was always good to leave out and when family came in during the day, you could make you a sandwich and join in on the party. Of course, there was always Italian Coconut Cream Cake and maybe a pie or two to nibble on.
While we were eating last night, my mom made the comment that this was the first year that she hasn’t fixed Christmas dinner in over 50 years. It was sad this year. My dad being gone now for a year, my brothers family didn’t come down, so it was jut my mom, my hubby and me. And we were glad that her neighbors asked us over for dinner. This was their first Christmas without a very large family and they were lonely too.
I hope there will always be family and friends to help celebrate the holidays with us.
