The Mutt or the Pure Bred?

Blog Prompt: Today is Mutt’s Day. Do you prefer a mutt or a purebred animal? Why?

I love all dogs, whether they are mutts or pure bred.  As most of you guys know, I have always owned boxers.  They are great family dogs and make great companions.  Duke, Barkley, Mia and now Ernest T. Bass have all been wonderful dogs.

I’m so glad we rescued Ernest and I wish more people would do that.  There are so many dogs out there that are pure bred that need to be rescued.  It breaks my heart to go the website where we got Ernest from and see all the boxers that need foster homes.  My husband has an old class mate that is pleading on Facebook right now for someone to foster her 2 dogs.  One is an American Bulldog and the other is a smaller dog.  She lives in the Jacksonville area and I hope someone can help her soon.

I have always heard that “mutts” are dogs that don’t seem to get sick as often or get the strange ailments that pure bred do.  All I know is that it seems the small pure bred dogs seem to be at the vets all the time.  All my boxers have died from cancer and Ernest is already showing signs of small tumors on his skin.

Let me tell you Ernest’s latest health weird thing he is going through.  He has always ate all his dog food for the day in the morning.  He is a very good eater and at night he will get a couple of treats before bed.  For quite sometime now, late in the day, he acts like he is going to get sick, but never does.  The vet says just to give him Pepcid AC.  It seemed to work for awhile, but then the trowing ups started again.

I did a search on Google and found a Boxer forum.  I told Ernest’s sad story and every person that came on there told me that he has the “Huger Pukes”.  And the cure is to divide his food in half, morning and night and add some yogurt to one of the meals.

I told my husband this and he was like me.  What the hell are Hunger Pukes?  Well, I am so glad to report that since we have been following that regiment, he has been fine.  No more hunger pukes!!!!!  Can you believe it?  A simple cure for his problem.

As long as Ernest is happy, then we are happy.  Ain’t he cute!

Father-in-Law

Blog Prompt: Today is Father-in-Law Day. Describe your father-in-law if you have one or tell what you think a perfect father-in-law would be like.

I don’t have a father-in-law because he passed away many years ago before I met my husband.  But, I understand by many family members and my husband he was a hoot!!  They more they talk about him, the more I realized where my husband got his personality and sense of humor from.

I know I would’ve really loved this man and I wish I could have one day with him to brag about his son and let him know what a good man he raised.  I know my husband would love to talk to him one more day too.

Someday, we will all be together and I will get that chance.

I thought I would pass along a picture of Glenn, he is the small boy, and his family many years ago at the Bok Sanctuary here in Florida.  His grand father helped build it.  Beautiful place.

Pasta For Everyone

Blog Prompt: Today is National Lasagna Day. Do you like Italian food? What is your favorite Italian dish?

*faints* Pat just had to put more food prompts!!!!! hehehe

I love lasagna so much. I have a pretty basic recipe and it works for us. I don’t make it very often because it makes so much and there is just the two of us. So, I usually end up putting half in the freezer for later. Which is a good thing.

I haven’t found anything Italian that I don’t like. Even the men!!!! *LOL* I am a pastaholic and love it made in any way, shape or form. I just read on a website about the history of pasta. Very interesting and worth a quick read. I have never made home made pasta, but I have a friend down the street that does it all the time. I can truly taste the difference. She is of Italian decent and she really can cook some good stuff for sure. I love it when she throws a party.

But, now adays, I only get wheat pasta. Yes, its brown in color, but I’ve come to enjoy it and you really have to watch it as it cooks. It can turn to mush very quickly.

I fixed my famous Pasta Salad the other day while my brother and his family were down for a visit. He loves that salad. Anyway, you are suppose to use tricolor twisted pasta, but I used wheat pasta. He looked at the salad and asked why the pasta was brown. I told him we only eat wheat pasta now and just eat it. It still tastes the same, it just isn’t as pretty as in the past. My brother is one of those people that if it doesn’t look the same, it can’t possibly be any good. He ate at least half of that huge batch I made.

I recently saw a great recipe on the food network and wanted to try it out. Since these are rolls, I think it will be so much easier to serve. I can NEVER serve lasagna without it falling apart when I take it out of the pan.

Lasagna

Sauce:

  • 2 tablespoons unsalted butter
  • 4 teaspoons all-purpose flour
  • 1 1/4 cups whole milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • Pinch ground nutmeg

Lasagna:

  • 1 (15-ounce) container whole milk ricotta cheese
  • 1 (10-ounce) package frozen chopped spinach, thawed, squeezed dry
  • 1 cup plus 2 tablespoons grated Parmesan
  • 3 ounces thinly sliced prosciutto, chopped
  • 1 large egg, beaten to blend
  • 3/4 teaspoon salt, plus more for salting water
  • 1/2 teaspoon freshly ground black pepper
  • 1 to 2 tablespoons olive oil
  • 12 uncooked lasagna noodles
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella (about 4 ounces)

To make the sauce: Melt the butter in a heavy medium saucepan over medium-low heat. Add the flour and whisk for 3 minutes. Whisk in the milk. Increase the heat to medium-high. Whisk the sauce until it comes to a simmer and is thick and smooth, about 3 minutes. Whisk the salt, pepper, and nutmeg into the bechamel sauce.

Preheat the oven to 450 degrees F.

Whisk the ricotta, spinach, 1 cup Parmesan, prosciutto, egg, salt, and pepper in a medium bowl to blend.

Add a tablespoon or 2 of oil to a large pot of boiling salted water. Boil the noodles until just tender but still firm to bite. Drain. Arrange the noodles in a single layer on a baking sheet to prevent them from sticking.

Butter a 13-by-9-by-2-inch glass baking dish. Pour the bechamel sauce over the bottom of the prepared dish. Lay out 4 lasagna noodles on a work surface, then spread about 3 tablespoons of ricotta mixture evenly over each noodle. Starting at 1 end, roll each noodle like a jelly roll. Lay the lasagna rolls seam side down, without touching, atop the bechamelsauce in the dish. Repeat with the remaining noodles and ricotta mixture. Spoon 1 cup of marinara sauce over the lasagna rolls. Sprinkle the mozzarella and remaining 2 tablespoons of Parmesan over the lasagna rolls. Cover tightly with foil. Bake until heated through and the sauce bubbles, about 20 minutes. Uncover and bake until the cheese on top becomes golden, about 15 minutes longer. Let stand for 10 minutes. Meanwhile, heat the remaining marinara sauce in a heavy small saucepan over medium heat until hot, and serve alongside.

Back Pain Exercise Program

I am a big advocate for exercise to keep your body working well and younger. I see people my age always complaining about back pain and I don’t want to be one of those people.

I found a website called Back2Yourself which has a great free trial back exercise program with video.  They provide you with progress tracking and professionals to talk to about your self training regimen. Being that I don’t have the funds for a personal trainer right now, I am signing up for a free trial.   I am hoping that this program will keep my back from having that constant pain that I see my family and friends suffer from.

Weighing the Options of Chocolate

Blog Prompt: Today is Milk Chocolate Day. (Don’t get this mixed up with Chocolate milk day.) Do you like milk chocolate or dark chocolate and why?

I LOVE CHOCOLATE!!!  And I much prefer dark over milk any day.  As a matter of fact, I had my dark chocolate Dove candy bar the other day.  Darn displays at the grocery store will get me every time!!

I have a few thoughts about chocolate I would like to share with you.

Cons - Fattening, too much sugar, not much on nutritional value as a candy bar and melts in your hand, toxic to animals, very addictive.

Pros – Cocoa or dark chocolate benefits the circulatory system, Other beneficial effects suggested include anticancer, brain stimulator, cough preventive and anti diarrhea effects, may stimulate the hypothalamus, inducing pleasurable sensations as well as affecting the levels of serotonin, an aphrodisiac, tastes great!

So, the conclusion I have come up with is how can anyone not find anything good about chocolate.  And by the way, I wouldn’t give my good chocolate to my dog anyway!!  I would choose dark chocolate over milk chocolate any day and it seems there are more benefits from the darker version.  And the idea that it might help my circulatory system, stimulate my brain a bit and causes me not to have diarrhea and the best part, could help me enjoy a nice night with my hubby!!

I conclude there is not a darn thing wrong with CHOCOLATE and I must have it!!!
