I would wake later and relax with coffee on the lanai and watch the birds at the bird feeder and enjoy conversation with my husband.  I would love to take a day trip or maybe do lunch with my hubby.  Relax in the afternoon with some recorded movies that are just waiting for me to watch.  You know the ones.  Those good chick flick.  I love watching Gone with the Wind when I am alone and cuddled up on the couch. 

I wouldn’t make dinner or it would be done on the grill.  Let my husband take care of that.  ;)  I would read a lot, maybe go out and work in the yard a bit.  Just be lazy!!

In 2010, the Space Shuttle project will stop and the last night blast off was on November 14th, so I knew I didn’t want to miss that.  We went to where the golf course starts and waited until 7:55 pm.  There were so many people there this time and I guess they all felt like me.  This is the last one and I want to be part of it.  Floridians feel very strong about the Kennedy Space Center, as other states cherish their monuments and places of history.

As the time approached, the clouds were heavy on the horizon and then the glow started and then there was nothing.  The crowd became very quite.  The clouds were so heavy in our area we couldn’t even see the glow of the rockets and believe me, I was starting to worry.  It seemed an eternity before the shuttle started peeking above the clouds and the crowd roared.  Its just a site to behold, especially at night.  We saw the rocket separation and then it went behind the clouds again.  I wish I could describe how the crowd feels every time you watch the shuttle make its way to space. 

The video I have below is a good example of how the crowd reacts to the blast off and especially when the shuttle went behind the clouds.  We did the same thing when we weren’t able to see it anymore.  You should get a chuckle out of it.  I hope you enjoy this little few second video.

I will finally get to visit Kennedy Space Center in December and we will have lunch with an Astronaut.  Story Musgrave has been with NASA for 30 years and worked closely with the Hubble Telescope and has logged many hours in space.  The reason I am so excited about seeing him is that he is friends with my last employer and I can’t wait to take picture of the two of us together to pass along to him.  They haven’t seen each other in many years.

I am looking forward to all the pictures and stories that I will cherish after a day at Kennedy Space Center.

One of my favorite recipes is Mexican Cornbread.  We love it with soups and chili.  It’s easy and I love the leftovers.

Mexican Cornbread

3 eggs
1/4 cup corn oil
1 cup buttermilk
1 1/2 cups shredded Cheddar cheese
1 (8 ounce) can cream-style corn
1 large onion, chopped
1/2 green pepper, chopped
2 fresh jalapeno peppers, seeded and minced
1 1/2  cup cornmeal
1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Preheat oven to 350 degrees F (175 degrees C). Grease an 8 inch square baking dish or a cast iron skillet.

In a small bowl, beat eggs. Mix in corn oil and buttermilk. Stir in 1 cup shredded cheese, creamed corn, onion, and jalapenos.

In a large bowl, whisk together cornmeal, baking powder, soda, and salt.

Stir the egg mixture into the dry ingredients. Mix well. Pour batter into prepared pan.

Sprinkle remaining 1/2 cup cheese on top. Bake about 45 minutes until center is set and top is golden brown. (sometimes baking time varies)

My biggest fear is being alone as I get older.  If my husband dies before me and my mother has passed on, it would just be me in Florida.  I have wonderful friends and I have lots to do, but that companionship that I never had until I met my husband of the past 6 years.  He makes me laugh so much and we enjoy each other’s company that I can’t imagine my time without him in my life.

I love this picture of my brother and I back in 1965.  This was his 1st snow.  We had lived in Hawaii for 5 years, so he grew up just knowing sun and heat.  When we moved back to Missouri, it was the middle of winter.  You can tell by the snowman, we weren’t experts at building one.

As the months went on and the houses didn’t sell, we were slowly falling into debt that was hard on both of us. We called the banks, credit card companies and worked with them until we were able to sell the flip homes and get ourselves back on track. I think by getting help very early, we were able to stop the high interest on our credit cards and wait for the market to ease off.

We are still not completely out of the red, but are slowly seeing the light at the end of the tunnel. One of the things we looked into was to use debt consolidation  for our bills. After doing a little research, this would have been great for our credit cards we used to buy supplies for the flip homes. One bill, one payment, less interest and a lot less worry on our part.

There aren’t enough words to express how I feel about our military.  These are the bravest men and women in the world, along with their families.  They sacrifice so much so our country stays free! 

This day is also very special to me because I come from a long line of military.  My father spent 20 years in the Navy, my brother spent 5 years in the Navy and is still in the National Guard and soon to retire after 20 years of that.  My husband served 5 years in the Air Force and his father served during WWII.
