I love this recipe because you don’t fry anything and baking it makes it much healthier.  But don’t tell my husband that!!

Chicken and Black Bean Quesadillas

1 (10.75 ounce) can Campbell’s Condensed Cheddar Cheese Soup
1/2 cup Pace® Chunky Salsa or Pace Picante Sauce
1 cup rinsed and drained canned black beans
2 (4.5 ounce) cans Swanson® Premium Chunk Chicken Breast in Water, drained or freezer chicken10 (8 inch) flour tortillas

Directions:
1. Heat the oven to 425 degrees F.

2. Heat the soup, salsa, beans and chicken in a 1-quart saucepan over medium heat until the mixture is hot and bubbling.

3. Place the tortillas onto 2 baking sheets. Spread about 1/3 cup soup mixture onto half of each tortilla to within 1/2 inch of the edge. Brush the edges of the tortillas with water. Fold the tortillas over the filling and press the edges to seal.

4. Bake for 5 minutes or until the filling is hot. Cut the quesadillas in half, making 20 pieces.

TIP:  I usually use chicken that I have cooked and shredded and is in the freezer.  If there is a good sale on canned chicken, I will use that also.

As we get older, many of us are struggling to keep or lose those unsightly extra pounds. We try to hit the gym, but as always, procrastination defeats us. Also, media denotes that beauty is being thin and fit. Of course, being fit is difficult if we live sedentary lives. I love finding new, easy and a way to save money way to shop.  One place online I have found that has some really great deals is nomorerack.com.

Our winter so far this year has been really nice and who doesn’t enjoy getting outdoors in the middle of December and go shopping for Christmas and not worry about freezing to death.

I just love putting up my tree every year and I bought a beautiful glass butterfly for this years ornament, along with a Cardinal to represent the Cards winning the World Series this year.

We got to Skype with my brother and have a nice dinner and breakfast with just the 4 of us. Of course, Ernest hates when I take his picture.

I used items form Weeds and Wildflowers which make my scrapbook pages so easy to make.

I hope everyone had a wonderful 2011 and that 2012 will be a wonderful and blessed year,

We moved in to a new house this year and I went to www.satellitestarinternet.com to have our internet set up. We had it set up just in time to do some Christmas shopping. I love the holidays, but I hate all of the crowds and traffic during the holidays. I decided this year to do all of my shopping online. I did not have to worry about finding a parking spot or standing in line. I was able to find coupons for most of the stuff I bought and I also got free shipping. Anything that I would have wanted to buy in the store, I was able to buy online. I was even able to buy gift cards and they mailed them to me. All of my Christmas shopping was done in a couple days rather than weeks. I do not know why I didn’t think to do all of my shopping online in past years. I do know that I will do it every year from now on though. It was so much easier.
